Planning the Programme

We propose to run the following courses and batches at our Institute:

Food Production Course (Code 201)
      July 2, 2012 – August 26, 2012
      Nov 6, 2012 – December 30, 2012
      March 4, 2012 – April 28, 2012

1. The minimum batch strength would be 25 and the maximum restricting to 30. In case, the number of eligible candidates is higher we are positioned to run more batches in phases with preference given on first come first serve basis.

2. The course contents and section wise duration of the Food and Beverage Service course shall be as per following slots :
Course Introduction 0.5 days
Etiquette training 4.5 days
English Language skills 7 days
Posture training 2 days
Yoga 4 days
Guest treatment 3 days
Housekeeping 5 days
Serving Food 6 days
Serving Beverages 6 days

1.The course content of the “Food Production Course” is as follows:

  • Course Introduction 0.5 days
  • Behaviour and Attitude training 2 days
  • How to use kitchen instruments, such as, knives, and utensils, like spatulas and pans, kadai of various types 0.5 days
  • How to knead flour for wheat breads and also for maida breads, for tava preparation and for tandoor preparation; how to make besan batter 1 days
  • How to handle vegetables and meat, Chicken and lamb, for cooking purpose1 daysHow to make and operate Tandoor 2 days
  • Tandoori Breads, such as, Naan, Butten Naan, Garlic Naan, Potato Naan, Roti, Kulcha, parantha, etc. 2 days
  • How to operate Gas and Electric Stove 0.5 days
  • How to make tava items such as roti and parantha, Plain and stuffed 1.5 days
  • Vegetarian starters cooking- Pakodas of various kinds, Namely, paneer pakoda, veg pakoda, bhaji, gobi pakoda, spring rolls and samosas 4 days
  • Vegetarian dishes cooking- from simple daal to dishes,such as, shahi paneer and palak kofta; up to 7-10 dishes 14 days
  • Non vegetarian dishes 14 days
  • Bakery and Confectionary 3 days
  • Beverages, such as Lemonade, Jaljeera 2 days
